Hi Beauties!

Long time since I posted a recipe. It is definitely a struggle to blog with a newborn and toddler at home! But also taking my time getting back into the swing of things. Enjoying the family time!

With that being said, I have a perfect family meal for you all today. Not only is this Dairy Free Tater Tot Casserole healthy, it is also a fan favourite! My toddler LOVED every bite. It is super easy to make and you can make it in advance and freeze for a later date. I loved being able to pull it out of the freezer, throw it in the oven, and dinner is made. Work smarter not harder!

Dairy Free Tater Tot Casserole Ingredients

  1. Lean ground beef
  2. Tater Tots
  3. Peas
  4. Corn
  5. White Onion
  6. Beef stock
  7. Worcestershire
  8. Salt and pepper to taste
  9. Arrowroot powder
  10. Tomato Paste

How to Make Healthy Tater Tot Casserole

  1. Preheat your oven to 350 degrees.
  2. Heat oil in a pan on medium heat. Sautée the onion, sauce for 5 minutes until soft.They should turn into a golden colour. Some pans require longer cooking to achieve this colour!
  3. Add ground beef to the pan, stir occasionally until fully cooked. You will know it is fully cooked once all the pink colour is gone. While cooking you might get a liquid in the pan, this is the excess fat coming off the meat. Spoon off this excess fat if necessary. Some ground beef is leaner then others.
  4. Stir in the tomato paste and Worcestershire sauce. Add the beef stock, bring to a simmer, then cover pan and cook for about 20 minutes.
  5. After 20 minutes uncover the pan and continue to cook for 15 more minutes. You should notice a little bit of bubbling but do not burn!
  6. Add in corn and green peas.If you are using frozen, you make need to let them cook in the pan for a few minutes to thaw.
  7. Add two tablespoon of arrowroot powder (or cornstarch) to cup with 3 tablespoon of cold water, mix with a whisk to avoid any clumps. Remove the pan from the heat and add half of the starch mixture to the meat. Make sure to stir to avoid lumps and give it a few minutes to thicken, then add the remainder. Continue to stir then add your salt and pepper to preference.
  8. Put meat mixture into an oven proof dish, top with one layer of tater tots as shown in photos.
  9. Bake for 20-25 mins until the tater tots are cooked and the meat gravy is starting to leak out around the edges.
  10. Serve and enjoy!

  • 1 lb extra lean ground beef
  • 1 bag frozen tater tots
  • 1 tablespoon oil
  • 1 large white onion diced
  • ½ cup green peas (frozen or can)
  • 2 tablespoon tomato paste
  • ½ cup corn (frozen or can)
  • 1 tablespoon Worcestershire
  • 2 cups beef stock (reduced sodium)
  • 2 tablespoon arrowroot powder (or cornstarch)
  • salt and pepper to taste
