How long does lime buttercream frosting keep?
Once you have made your lime buttercream frosting, place it into an airtight container in the refrigerator and it will keep well for up to 1 week. Allow it to come up to room temperature for about 30 minutes, and quickly re-whip it so that it’s easy to pipe. Keep your buttercream sealed and away from strong odors in your refrigerator.
Can I freeze lime buttercream frosting?
Yes! This freezes really well, so be sure not to throw out any leftovers, or, make a double batch! Store in a sealable container and it will keep well frozen for up to 6 months. Thaw it in the fridge overnight, let it come to room temperature, and then re-whip it to get it light and fluffy before using.
How long does a buttercream-frosted cake keep?
Once you have frosted your cake(s), they will generally keep well in an airtight container for 3 days in the refrigerator. Because this is an all-butter frosting, it shouldn’t be kept at room temperature for more than a few hours.
Recipe Tips and Tricks
- Start your stand mixer on low before increasing it to a high speed. If you start it high, you will get clouds of powdered sugar all over your kitchen.
- Use fresh lime juice rather than bottled for the zingiest flavor. For a milder lime flavor, you can leave out the zest.
- This recipe makes enough for 2 cups of frosting.
This lime buttercream frosting is so good! It’s such an easy way to add flavor to your desserts, and it’s perfectly rich, light and fluffy. You’re going to love it!

Ingredients
- 1½ cups unsalted butter 339 grams, room temperature (3 sticks)
- 6 cups powdered sugar 678 grams
- 1 lime juiced and zested (about 2 tablespoons juice and 2 teaspoons zest)
- ⅛ teaspoon kosher salt
Equipment
Kitchen Scale (optional)
Stand Mixer
Instructions
In the bowl of a stand mixer fitted with the whisk attachment, combine all of the ingredients. Whip on low until the powdered sugar is about halfway incorporated, about 1 minute. If you whip at a higher speed before the powdered sugar is a little incorporated, it will fly out of the bowl.
1½ cups unsalted butter, 6 cups powdered sugar, 1 lime, ⅛ teaspoon kosher salt
Increase the mixer speed to medium high and whip for another 30 seconds before increasing it to high. Whip for 3-4 minutes to allow the powdered sugar to dissolve into the butter and for it to get fluffy.
