Chicken Pot Pie

Recipe Yield: 1- 9″ chicken pot pie

Prep Time: 3-4 hours

Max Hold Time: 3-4 days in refrigerator, 30 days in freezer

Ingredients:

  • 1 mealy pie crust (see instructions here)
  • 1 flaky pie crust (see instructions here)
  • 2 thighs, 1 large chicken breast or 4 chicken legs
  • 3 medium potatoes, diced
  • 10 baby carrots, diced
  • 1- 14oz can of green beans, drained
  • 1 yellow onion, diced
  • 1 bay leaf
  • 2- 0.4 oz garlic
  • 2- 0.2 oz season salt
  • 2- 0.1 oz pepper
  • 1- 0.5 oz Worcestershire sauce
  • 1- 10.5 oz can of cream of chicken soup
  • 2 oz of chicken broth (created in the cooking process)
  • 3 oz of cheddar cheese
  • 2 oz of heavy cream
  • 5 oz of cooked chicken (from the 2 things, 1 large chicken breast, or 4 chicken legs listed above)

Directions:

  1. Put the chicken into a large stockpot or large pot with the bay leaf, garlic, season salt, pepper, Worcestershire sauce, and onion.
  2. Cover with water and boil for 1 hour.
  3. While chicken boils, create your mealy pie dough by following the instructions here and your flaky pie crust by following the instructions here. Make sure to check out our top 5 secrets about making crust here. *Remember to blind bake your mealy dough for the bottom crust.*
  4. After 1 hour, pull the chicken out of the water and let cool.
  5. In the pot of chicken water, boil potatoes and carrots for 40 minutes.
  6. Drain chicken broth; retaining 2 oz for pie filling.
  7. Pull your chicken from the bone. If no bone, then shred the chicken.
  8. In a bowl, mix carrots, potatoes, green beans, garlic, season salt, pepper, cream of chicken soup, cheese, chicken broth, heavy cream, and 5 oz of your shredded chicken. Make sure to mix.
  9. Pour into blind-baked mealy pie dough.
  10. Top with flaky pie dough.
  11. Bake for 45 minutes until golden brown.
